Thankfulness

A few months have gone down the road since my last post. I reached this point where I was completely consumed with adjusting to a new life. We had finally reached a routine in our married life and become accustomed to one another when C graduated and started working full-time and then I started a new job and well... life began. For a period of time, blogging started to feel as if it were a second job that I just did not have the energy to maintain. I never intended to blog for the sake of others. My intention was to blog for the sake of keeping records of our life that otherwise would not be written down and to keep our families in the loop of what has been happening. I hope to revive that purpose this coming year. I love the blogging community and I am so thankful for all of you who have still messaged me, emailed me, and commented even in this drought of posts. Just know that you are greatly appreciated.

A new year is coming quickly. I honestly cannot believe 2013 is just around the corner. This year my eyes have been opened and my heart has been broken. If you have been around my blog very long then you have seen the Joshua Project that highlights an unreached people group somewhere around the world each day. I have always been a person that was internationally focused. My heart has always longed to spend a great deal of time spreading the gospel overseas. Maybe at some point that will happen, but this year the Lord revealed the pain and darkness that has been surrounding me in my city all this time. On top of that, I had an opportunity to travel to Brussels and be captivated by the strength of the followers of Christ in a city that is almost entirely unreached. The intentionality and dedication to reaching the people of Brussels that the church exemplified encouraged me and challenged me more than words can truly express.

As we approach the new year, my heart is mindful of those who need to hear the gospel. Between the believers and ministries around the world, I pray that the Lord would use us in mighty ways this year. I pray that we would be willing to follow where He leads us. I know this year has some exciting moments ahead, but most importantly I know that many more lost souls will come to know their Creator this year. That is something to look forward to in the coming days. As you think about resolutions and goals for the next twelve months, stop and think about how you can make a difference for the kingdom this year. There are opportunities all around us. We just need to open our eyes to them and take a step in faith that God is guiding our every step.

2012 was a year of transition. What does 2013 hold for me? It will be a year of thankfulness. I pray that thankfulness will resonate in all that I do throughout this coming year, that I will be reminded of all the Lord has done for me. Through that thankfulness, I hope to give back joy and love in every opportunity that I am given because it has so graciously been given to me.

Update on Life

Dear sweet bloggy friends,
I am so grateful that so many of you have joined me in this journey of life. I have a huge update to share.

As you all know, I recently started a new job serving as part of an inner-city children's ministry. I feel so blessed to be a part of their staff! I need to get adjusted to my new job and focusing my time and energy on that to best prepare myself for the Lord to use me in mighty ways. I am excited for the future ahead of me, but I know it means that something has to give. What this means is that I will be taking a step back from the blogging world for a bit. I still want to share recipes, crafts, and my life with all of you, but without it being another full-time job. I do have some things up my sleeve that I just can't wait to share with you when the time permits, but I just needed to share my heart with you. I appreciate you so much being willing to join me in my blogging journey. I cannot express enough how grateful I am for you! Now, for the fun stuff...

Layered Tostado

Being from the South, C is a meat with every meal kind of boy. I typically am a meat with every meal kind of girl, but this was just fine without (in my opinion :) ). Just know, if we made this again, I am sure C we would be adding some beef to this mixture. Nonetheless, this is incredibly easy and delicious! It also may be one of the healthiest Mexican dishes I have ever eaten. I am all about the queso and enchiladas and anything else smothered in cheese. So here's to giving Mexican a healthy twist. Feel free to add any other veggies you like to this (i.e. tomatoes, corn, mushrooms, etc.). We are sadly not veggie living people around this household so we keep it pretty simple. Here's the recipe for the Layered Tostado.

Ingredients:
-6 8" flour tortillas 
-1 16 oz jar of salsa
-1 16 oz can of refried beans
-1 cup shredded lettuce
-1 cup shredded cheddar cheese
-1 avocado peeled and cut up

Directions:
1. In a large ungreased skillet, cook tortillas for 1-2 minutes on each side or until lightly browned.
2. Remove and set aside.
3. Warm refried beans and salsa in separate pans.
4. Spread refried beans over each tortilla. 
5. Top with lettuce, salsa, cheese, avocados, and anything else you decided to add to your tostado. 
6. Enjoy!

Breakfast Pita Pocket

Who does not love a good breakfast sandwich? The best part about this one is the pita bread acts as a pocket so everything stays inside when you pick it up and take a nice big bite. Whoever came up with the idea for pita bread gets two fist pumps for being an absolute genius. Here's the recipe for the Breakfast Pita Pocket.

Ingredients:
-1/2 pound of sausage
-1/2 pound of bacon
-6 eggs
-2 Tbsp milk
-1 tsp salt
-1/4 tsp pepper
-1 cup shredded Colby-Monterey jack cheese
-3 pita breads, halved

Directions:
1. Brown sausage and drain.
2. Cook bacon and crumble into little pieces.
3. Combine sausage and bacon and keep warm.
4. Whisk eggs, milk, salt, and pepper together.
5. Pour into the skillet. 
6. Cook and stir over medium heat until eggs are almost done.
7. Add sausage and bacon mixture and cheese.
8. Cook and stir for 2 minutes or until eggs are completed done and cheese is melted.
9. Spoon into pita halves.
10. Enjoy!
