Layered Tostado

Being from the South, C is a meat with every meal kind of boy. I typically am a meat with every meal kind of girl, but this was just fine without (in my opinion :) ). Just know, if we made this again, I am sure C we would be adding some beef to this mixture. Nonetheless, this is incredibly easy and delicious! It also may be one of the healthiest Mexican dishes I have ever eaten. I am all about the queso and enchiladas and anything else smothered in cheese. So here's to giving Mexican a healthy twist. Feel free to add any other veggies you like to this (i.e. tomatoes, corn, mushrooms, etc.). We are sadly not veggie living people around this household so we keep it pretty simple. Here's the recipe for the Layered Tostado.

Ingredients:
-6 8" flour tortillas 
-1 16 oz jar of salsa
-1 16 oz can of refried beans
-1 cup shredded lettuce
-1 cup shredded cheddar cheese
-1 avocado peeled and cut up

Directions:
1. In a large ungreased skillet, cook tortillas for 1-2 minutes on each side or until lightly browned.
2. Remove and set aside.
3. Warm refried beans and salsa in separate pans.
4. Spread refried beans over each tortilla. 
5. Top with lettuce, salsa, cheese, avocados, and anything else you decided to add to your tostado. 
6. Enjoy!
