Bacon, Egg, and Cheese Biscuit Casserole

Do you remember the cheddar biscuit recipe I shared last week? If  you have tried it and liked it, then you are going to love this! This is just one step further on that recipe. Here is the recipe for the Bacon, Egg, and Cheese Biscuit Casserole

Ingredients for Biscuits:
-1 cup flour
-1/2 Tbsp baking powder
-1/2 tsp sugar
-1/8 tsp baking soda
-1/2 tsp salt
-3 Tbsp unsalted butter, cut into pieces
-1/3 cup buttermilk
-1/3 cup shredded cheddar cheese

Ingredients for Bacon, Egg, and Cheese Biscuit Casserole:
-1/2 pound bacon, cooked and chopped up
-3 large eggs
-3/4 cup milk
-1 tsp salt
-1 tsp pepper
-1/4 cup shredded cheddar cheese
Directions for Biscuits:
1. Preheat oven to 425 degrees.
2. Combine flour, baking powder, sugar, baking soda, and salt. Whisk until well combined.
3. Mix in pieces of butter. Texture should start to resemble small pebbles.
4. Pour buttermilk and cheese into mixture and stir until well combined.
5. Using a large cookie scoop, scoop out dough onto lightly greased cookie sheet.
6. Bake for 8-10 minutes or until golden brown.
7. Preheat oven to 350 degrees.
8. Lightly grease a 1.5 quart casserole dish.
9. Cut all biscuits in half.
10. Place the bottom half of biscuits all along bottom of casserole dish.
11. Cover the biscuits with chopped bacon.
12. Sprinkle cheddar cheese over the bacon.
13. Place biscuit tops over the cheese.
14. Whisk together eggs, milk, salt, and pepper.
15. Pour egg mixture over biscuits.
16. Cover and refrigerate for 30 minutes so that egg mixture can be absorbed into biscuits.
17. Bake covered in foil for 45-55 minutes or until fork comes out clean when inserted into casserole.
